Signature Chocolate Chip Cookies: Soft and Chewy

I am in my 40’s and didn’t have a signature chocolate chip cookie recipe, until now. I have gotten into baking and I feel like I should have a good cookie recipe in my pocket. Cookies are a staple to bring to gatherings, celebrations and even just a treat to bring to your co-workers at work on a whim. So I have tried a bunch of recipes and am bringing you the best recipe I have tried. These cookies come out good everytime. The trick is to not bake them too long. I don’t leave these in the oven for longer than 9 minutes, most of the time no longer than 8 minutes.

These cookies come together fast with a stand mixer, and bake up in 8 mintues. So you can have gooey cookies in about 20 minutes total. These even freeze well, making them easy to have on hand in the freezer for a last minute treat. If you ever have friends or neighbors pop in to your house, this will be a lifesaver.

  1. Start by mixing all dry ingredients (except sugars )into a large bowl. Set this aside.
  1. In a stand mixer, mix together softened butter, sugars, and vanilla.
  2. Add in the 2 eggs and mix until combined.
  3. Take your dry ingredients and add a little at a time into mixer, until a soft dough forms. The dough should not be sticky or dry and crumbly.
  1. Last mix in the 1 1/2 cups of chocolate chips. I made white chocolate chip cookies this time but regular chocolate chips work perfect here.
  2. Scoop out dough with a spoon or cookie scoop.
  3. Pre-heat oven to 375 F.
  4. Bake cookies for no longer than 9 minutes, For my elevation in Utah I only bake them for 8 mintues total.
  1. Pull out of oven, they won’t look done but they are. Let cool, then serve.

Freezing Cookie Dough

  1. This recipe makes a lot of cookie dough. I usually freeze about half of it for later.
  2. To bake cookies from frozen, pull out cookie dough from the freezer and place onto a greased cookie sheet
  3. Turn oven onto 350 F and place cookies in oven while pre-heating. This will be the perfect baking time.
  4. Bake frozen cookie dough for 8 minutes from when your oven is fully preheated ( remember to add frozen cookies in while oven is pre-heating) Start the 8 minute timer when your oven is preheated.
